Here’s a peek at an infusion waiting to happen. This one features African Peppermint (mentha piperita). Although this is the same plant that grows in many countries, I find the ones form Africa have a particularly pepperminty punch of fragrance.

The medium for this infusion will be vinegar. Let’s see if the peppermint can overpower the vinegar. It’s going to be an epic battle!
